Cut each banana in half crosswise. Then cut again lengthwise so that you have 8 banana pairs (2 pieces for each ghost - like a banana sandwich).
Spread peanut butter on one banana (the cut side). Then place another banana piece on top - to form a banana sandwich. Repeat until you have 8 banana sandwiches.
Gently insert a popsicle stick into the bottom of each banana sandwich, ensuring the stick seems stable and secure.
Place the bananas on a baking sheet lined with parchment paper and freeze for about 1 hour or until firm.
In a microwave-safe bowl, melt the white chocolate baking wafers (or 1/2 of an almond bark brick). Heat for 30 seconds and stir. Repeat. If you need to heat longer, continue to heat at 20-second intervals and stirring each time until the mixture is smooth. Stir in oil when chocolate is melted.
Pour melted chocolate into tall glass.
Remove firm bananas from freezer and dip each one into the tall glass, ensuring all areas of each banana pop is coated. Place coated bananas back on parchment paper.
After all bananas have been dipped, add two chocolate chip eyes to each banana pop ghost.
Let bananas set until chocolate has hardened. Serve immediately or place them back in the freezer until ready to serve. Keep cool while serving or the chocolate may become gooey.
