What is the Difference Between Popcorn and Puffcorn?

You may be wondering what is the difference between popcorn and puffcorn. We have grown to love using puffcorn in many of our sweet and salty recipes years ago because puffcorn offers a uniform consistency that popcorn doesn’t.

You don’t have to worry about kids choking on kernels, and the puffcorn offers a crispy texture with no kernals thanks to a different preparation process – similar to that of Cheetos Cheese Puffs (but without the cheese).

Helpful Tips for Melting Almond Bark

The key to these no bake bird’s nest treats and most other no bake treats with almond bark is that you have to heat and melt the almond bark until smooth with no lumps. This means heating it in a microwave-safe bowl in intervals and stirring repeatedly. We also like to split the almond bark in half and work in batches.

  • Split bark in half and place half in a microwave safe bowl. Heat for 60 seconds and then stir. (There may not be much movement yet with the bark.)
  • Then, heat for 15-20 second intervals and stir – repeatedly until the mixture is completely melted.
  • As soon as the batch is completely melted, add half a bag of Puffcorn into the bowl (1/2 bark per 1/2 bag of popcorn). The longer you wait to pour and mix, the clumpier the melted almond bark will become.

Forming the Cloud Shapes for Your Almond Bark Clouds

Once the almond bark and the popcorn are mixed together, it’s time to start dropping your clouds onto a piece of parchment paper or foil. We line two large baking sheets with parchment paper.

With a large spoon, we form the clouds by dropping one spoonful at a time in similar-sized blobs on the parchment paper. We average 7-10 pieces of Puffcorn for each cloud. The clouds will each take on their own shape and will not look the same – just like the actual clouds in the sky!

Adding the Finishing Touches for Your Puffcorn Clouds and Rainbows Treats

Once the almond bark clouds are spread out on the parchment paper, it’s time to add some gold sprinkles and tuck in one rainbow strip as an arch over the clouds.

Sometimes the rainbows have trouble keeping their shape when standing upright. Adding a dollop of melted almond bark to the side of rainbow where it meets the almond bark helps to hold it – kind of like a glue. Just beware. Almond bark is messy – just like glue!

If the rainbows want to go rogue and lean a certain way, you may have to use your fingers to try to manipulate them into an arch shape.

Let everything set, undisturbed, on the parchment paper for 30 minutes to an hour. The treats should be firm and dry when you serve them.

Types of Sprinkles to Use for Popcorn Clouds and Rainbows Treats

You can pretty much put in any type of gold sprinkles to amplify the St. Patrick’s Day theme. We used basic gold sugar crystals that we already had in our pantry. But there are chunkier and larger gold sprinkles out there to choose from.

You could also use rainbow sprinkles if you wanted.

Ingredients
  

  • 24 oz Almond Bark
  • 3.25 oz Puffcorn Chester's butter flavor
  • Rainbow candy Airheads rainbow ribbon candy
  • Gold sprinkles

Instructions
 

  • Melt 12 ounces of almond bark in microwave safe bowl – working in two batches. Heat at 60 seconds and stir. Then, heat at 15-20 second intervals afterward, stirring each time until almond bark is completely melted and smooth.
  • Add 1/2 bag of puffcorn to the bowl with the first 12 ounces of melted almond bark. Mix well until all puffcorn is coated.
  • Drop large spoonfuls of coated puffcorn onto a baking sheet lined with parchment paper, shaping them gently to look like clouds. Each one will look different.
  • Insert one rainbow as an arch over each cloud – to look like a rainbow over the clouds. You may need to add a drop of melted almond bark on each end of the rainbow – using it like glue.
  • Sprinkle with gold sprinkles and allow clouds to set for 30 minutes to one hour before moving or serving.
    Repeat the steps with the remaining almond bark/puffcorn/rainbow candy.
