Rumor has it the the history dates back to when a Main farmer’s wife developed the small treats as a way to send something sweet in her husband’s lunch as he headed out to the farms for work.

Today, there are many variations of whoopie pies – with many flavors of the outer shells and many flavors for the whoopie pie filling. Some still question whether a whoopie pie is a cookie or cake. The answer may satisfy some but not others. A whoopie pie is a cookie-cake! How’s that for being clear as mud?

Basically, whoopie pies are two soft masses of soft cake that are formed in circles which give it a cookie-like appearance.

Ingredients Needed For Whoopie Pie Cookie-Cakes

Option 1: For Cake Mix Whoopie Pies

  • Devil’s Food Cake Mix – 15 ounce box
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • Instant chocolate pudding mix – the smaller 4-serving box

Option 2: Using Store-Bought Bakery Cookies

For this recipe, you can skip the baking altogether and use purchased bakery chocolate cookies (as styled in our photos). Cookies need to be soft cake-style cookies.

Ingredients Needed for Green Whoopie Pie Filling

Option 1: Homemade Whoopie Pie Filling

  • Unsalted butter
  • Powdered sugar
  • Milk
  • Vanilla
  • Green food coloring

Option 2: Use Purchased Frosting for Whoopie Pie Filling

  • Use two store-bought containers of vanilla frosting, mixing in a few drops of green food coloring until you have the perfect shade of green.

Ingredients For Decorating Whoopie Pies for Halloween

  • Mini marshmallows
  • Edible ink writing pen for marking the eyeballs – found in some speciality baking areas and on Amazon (linked below)

How to Bake Frankenstein Whoopie Pies with Cake Mix

In one large mixing bowl, beat all the cake batter ingredients. Beat for about one minute until all ingredients are mixed and no obvious lumps are present.

To bake whoopie pies, you can use whoopie pie baking pans to ensure even consistency with all the pieces. Or you can put all the cake batter mix (after it is mixed) into a large gallon Ziplock bag. Cut a small hole in one corner. Onto a greased baking pan, pipe even circles of cookies – filling them in completely. They should all be similar sizes with two inches spaced in between each.

Then, you will bake the cookie-cakes for about 12 minutes at 350 degrees. Carefully, turn them out onto wire racks to allow them to cool.

How to Make Easy Whoopie Pie Filling

While the cookies are baking and cooling, work on the whoopie pie filling, adding a bit of green food coloring for the Frankenstein effect.

To make a homemade whoopie pie filling, you make a buttercream filling which is so easy to do following our steps in the recipe card below.

Once you have the consistency, you add in a few drops of green food coloring until you have the desired green color.

If you choose to use store-bought vanilla frosting instead, just add the frosting to a mixing bowl and mix in a few drops of green food coloring.

When the whoopie pie shells are cool, simply sandwich frosting in between two cookie-cakes with a butter knife.

Decorating Frankenstein Whoopie Pies for Halloween

This step couldn’t be more simple! We use our edible icing markers to add a single dot to each marshmallow to make eyeball marshmallows. Then, we space out about six marshmallows around each whoopie pie. with the eyeballs facing out.

You could also just space the marshmallows around half of the whoopie pies if you prefer.

How to Store and Serve

These whoopie pies needs to stay refrigerated because they have buttercream frosting inside.

Whoopie pies can stay refrigerated for up to a week in an air-tight container. Did you know you can freeze whoopie pies for up to two months in an air-tight container also? If so, you simply thaw and bring back to room temperature before serving.

Personally, we prefer to eat whoopie pies fresh!

Ingredients
  

Whoopie Pie Cookie-Cakes with Cake Mix

  • 15 oz Devil's Food cake mix
  • ¾ cup Water
  • ½ cup Vegetable oil
  • 3 Eggs
  • 3.9 oz Instant pudding mix chocolate

Whoopie Pie Filling

  • 6 tbsp Unsalted butter softened
  • 2⅔ cups Powdered sugar
  • cup Milk up to ½ cup milk, as needed
  • 1 tsp Vanilla
  • Food coloring drops Green

Decoration

  • Mini marshmallows
  • Edible icing pen

Instructions
 

Make Whoopie Pie Cookie-Cakes

  • Preheat oven to 350℉.
  • In a large mixing bowl, add the devil's food cake mix, water, vegetable oil, eggs, and instant pudding mix. Mix until smooth.
  • Grease whoopie pan molds.
  • Add batter about ⅔ full in each mold.
  • Bake for 10-12 minutes at 350℉ until whoopie cookie-cakes appear set and slightly pulled in from the edges of the mold.
  • Cool for 1-2 minutes before carefully turning out onto wire racks to cool completely.

Make Whoopie Pie Filling

  • In a mixing bowl, beat softened butter.
  • To the butter, add powdered sugar alternately with a little milk, beating after each addition until mixture seems consistent.*
  • Add vanilla and mix for another 10 seconds.
  • Add a few drops of food coloring and mix again until you have the desired green.

Decorate Whoopie Pies

  • Take one cooled whoopie pie cookie-cake. Spread a layer of filling before adding a second cookie-cake on top.
  • Decorate mini marshmallows with a single dot from an edible marker pen. Place 5-6 marshmallows all around each whoopie pie with the dot facing out – for a Frankenstein effect.

Notes

  • If frosting looks dry, add a bit of milk until the frosting comes to the right consistency. Or if not firm enough, add a bit more powdered sugar until frosting is thick enough for spreading.
